This Week for Dinner

Our menu changed up a bit last week, so we're doing lasagna this week. Also this past Sunday we didn't do our roasted chicken (I've got to remember to defrost!). We did have some delicious roasted brussel sprouts and carrots with a baked meatloaf and buttered kluski noodles. The kind I have are an Amish homestyle dried noodle that I cook in broth. They have a great texture.

We are also hosting dinner this coming Sunday for Easter. I may change something out on the menu, but for now we have:

Monday: Sausage lasagna with romaine salad
Tuesday: Vegetable Frittata and garden salad
Wednesday: Leftover lasagna and steamed broccoli
Thursday: Parmesan crusted chicken breast with baby carrots and crispy potatoes.
Friday: Shrimp scampi with wheat spaghetti , garlic bread, fresh salad
Saturday: Pork Tenderloin, sweet potato fries, strawberry spinach salad
Sunday: Honey-baked ham, fresh and smoked polish sausage, sweet potato casserole, baked beans, cope’s corn, spring peas, rye bread and polish easter bread, flourless chocolate cake and fresh whipped cream

Weekend Recap

A work weekend. Lots of painting inside. A list of outside projects to take care of. Lots of playing outdoors, despite the chilly wind.

Little ones help baking an apple oatmeal bread. Cookies and milk.

Weekend in Chicago

What a fun and strange weekend. One day we are in short sleeves, the next day in full winter gear. We fit a lot into our trip to Chicago. A playdate with old friends, a trip to Trader Joes to stock up on our favorites, and a fabulous dinner party.

We started with roasted red pepper dip and pita chips, then we had a romaine salad with feta, grilled asparagus, leg of lamb, and baked potato. For dessert, some killer yellow cupcakes with champagne pomegranate buttercream.

The next day, an Egyptian themed birthday party at the Field Museum, complete with three giant pyramid cakes and mummy cookies (all baked by my friend). I wish I had taken a picture of them, they were incredible!

On the way home we somehow fit in a trip to the butcher and to the nursery for some blueberry bushes and fruit trees.
I'm really tired today.
But how I love that city.

In Between

This is an awkward time of year, certainly my least favorite. Remnants of snow and ice scattered, fields matted down, no new growth just yet, lots of rainy days, and everything covered in mud. But the warmer temperatures allow for a little longer play outside, which is very exciting for some little people around here.

Digging for treasures in mud puddles, you never know what you'll find.

Preparing to finish up lots of yard "work".

Spotting a pretty strip of lavender in a grey-brown field.


Upon closer inspection we discover beautiful, but razor sharp arched brambles in plum, smoke, magenta and periwinkle.

Mysterious berries all over the ground

Textural contrasts of downy cotton amongst swordlike thorns.

And hopefully this upcoming weekend, some more outdoor time.
